How to Store Anaheim Peppers
Anaheim peppers have an excellent balance of sweetness and heat, making them a great addition to soups, sauces, and stir fry. Storing peppers properly is a great way to save time on future recipes and prevent food waste. Keep them in the fridge if you'll be using them within a couple of weeks. Otherwise, you can freeze them!

Storing in the Fridge

Look for peppers free of blemishes or wrinkles. When selecting produce at the farmers market or local supermarket, check the skin and stem area for imperfections. Fresh peppers will be firm when you touch them, and have no evidence of mold near the stem.

Clean the peppers, but do not wash them. If you are not using the peppers in a recipe immediately, do not wash them with water. Simply brush the dirt off with your hands or a paper towel. If you rinse them before storing them, the excess moisture will promote the growth of bacteria and cause premature spoilage.

Store peppers in the fridge for 1-2 weeks. Peppers can be kept in the produce drawer of your fridge, and you do not have to keep them in a bag. Most peppers, including Anaheim peppers, will stay fresh for approximately 1-2 weeks, but will spoil more quickly if once they are chopped.

Storing in the Freezer

Prepare your work station. Especially if you have lots of peppers to preserve, keeping your work-station organized will prevent confusion and streamline your process. You will need the following items: Rubber gloves A knife Freezer bags A permanent marker

Clean peppers thoroughly and place in freezer bags. Anaheim peppers can be frozen whole, and do not need to be seeded. However, if you would like smaller peppers for soups or fajitas, they can be chopped in half or diced. Wash peppers thoroughly and dry them. Chop them into desired sizes, if needed. Transfer the peppers to freezer bags, remove excess air, and seal.

Label your freezer bags and place them in the freezer. Writing the name of the pepper and date you froze it is important to reduce food waste. Anaheim peppers will last between eight and twelve months in the freezer. Place newer bags toward the back of the freezer, and do not crowd the bags so freezing occurs evenly.
