BANGALORE: City-based Hotel Trinity Isle is bringing back the traditional steamed cakes with the richness of ingredients lying within the cake for the first time in city for this Christmas.Speaking to Express at the Christmas cake mixing session on the hotel premises on Saturday, Manoj Nair, General Manager of the hotel, said, “Unlike the baked cakes which are available everywhere, we thought of bringing out something different and Christmas was the best time. Like the baked cakes, the steamed cakes do not give the roasted flavour, but they withhold the richness of the product and their ingredients.”“I got this concept of steamed cake during my recent visit to Thailand. We did a trial here and it was successful. The shelf life of the steamed cake also remains longer compared to the baked ones,” he added.About 70 kg of steamed cake preparation has been estimated, with each mould weighing 450 gms for the Christmas. Nair said, “All these cakes will be distributed to corporates and our clients.”Explaining about its ingredients, Rajan, Executive Chef,Hotel Trinity Isle, said, “Today we have begun with the mixing of ingredients. Dry fruits including raisins, orange peel, ginger peel, pistas, home made spices, brandy, whisky and rum have been mixed. This will be soaked for about a month in air tight containers.”“On December 22, this mixture will be taken out and mixed with flour, egg, butter and other essence and as per the required shape the mould will be steamed and there comes the steamed cake for Christmas,” he explained.
