Celery strings can be a little tough and chewy sometimes and when they are, it is best to remove them so that you can enjoy the rest of the celery, either as a snack or as part of a dish.
Make a small cut at the base of the stalk. This cut should be about 3cm/1.1" in length.
Use a sharp knife to pull the strings down towards the cut. When the strings reach the cut, the will lift automatically.
Try an alternative method. If preferred, you can use a vegetable peeler and lightly peel off the strings.
